The adapter can take 2x M.2 SATA SSD and 1x M.2 PCIe (AHCI or NVMe) SSD in length of 42, 60, 80, and 110 mm.

Q 1 .   Does PEXM2-125 work on Mac Pro 2012 5.1 Sierra, and work with Kingston Digital HyperX Predator 480 GB? How many predator cards can I install in this card?
Answer:
PEXM2-125 supports 1x PCIe based (NVMe or AHCI) M.2 SSD and 2x SATA based M.2 SSDs. (The PCIe based M.2 socked is wired to PCI Express bus while the 2x SATA based M.2 sockets are via SATA ports.)
 
PEXM2-125 passes through PCIe signals between PCIe SSD and PCIe bus. It doesn't need driver for PEXM2-125.
As the Kingston Digital HyperX Predator 480 GB is a PCIe AHCI M.2 SSD, it works on PEXM2-125 on Mac Pro.
Only one Predator card can be installed on PEXM2-125. The other two M.2 slots are for SATA based SSDs.
 
It would be OK with PEXM2-125 + Predator 480 GB on Mac Pro 2012 5.1 Sierra.

Q 2 .   Can it be used along with a NVMe SSD for boot drive on Windows 7 64 bit system?
Answer:

The NVMe native driver for Windows 7 is available from Microsoft Knowledge Base (https://support.microsoft.com/en-us/kb/2990941). You will need to download the Microsoft NVMe native driver to get it to work. As for a boot drive, it depends on your system or motherboard BIOS. If your system BIOS is able to recognize NVMe SSDs, you can make it as a boot drive.  The NVMe native driver is built-in on Windows 10 and 8.
